Too Much Peanut Butter? Depends on Who You Ask.
I made these peanut butter energy bites on a Sunday afternoon because I had oats, good intentions, and a jar of peanut butter staring me down in the pantry.
They came out soft, chewy, and just a little crunchy from the chia seeds.
Chocolate chips, cocoa, and cranberries give them dessert vibes. Still, the flax and oats keep them technically in the health snack category.
Here's the thing: I liked them—honestly, they're excellent. But I couldn't eat more than two before the peanut butter started yelling louder than the chocolate. I'm just not a big PB person.
My husband, on the other hand, LOVED them like
"can't-stop-eating-these-while-standing-by-the-fridge" level love.
"These are the best peanut butter balls I've ever had".
Gosh, he sure knows how to butter me up 😍
If peanut butter is your love language, these are your soulmate snacks.
And then there's our nine-year-old, who gave them a 1.6 out of 10. When I asked why, she shrugged and said, "Mm. I don't know. They're just a 1.6." Brutally honest…just like her momma.
Verdict:
Easy to make, filling, and dangerously peanut-buttery. A 10/10 if you're my husband, a 1.6 if you're my kid, and a solid "pretty damn good" from me.
